Yes you can log them. You do have to visit the place though to get information to answer a question. It will be something like "At this location there is such and such geological feature. This is the history. Go to the listed co-ords and count how many of the formation there are." You need to visit the location to find the answer in order to prove you wet there. Message the CO, do not include the info in the log, as it makes it easy for other to cheat.

Are you able to log an earth cache ? Based on what I read is it typicality is just a landmark or something like that there is no actual geocaching involved.

If you read the cache pages for Earthcaches, they typically explain what the logging requirements are for you to log your "found it" log online. There is no logbook to sign, if that's what you're asking.

The Guidelines include logging requirements for Earthcaches in the section "III. LOGGING Guidelines: Logging Guidelines cover the requirements that must be fulfilled in order to log a find."

Logging requirements for Earthcaches is also discussed in this Help Center article:

Help Center → Hiding a Geocache → Creating EarthCaches

2.2. EarthCache Logging Requirements

If you look at the cache pages for Earthcaches in your area, you will see that there are a variety of tasks involved, and questions to be answered, in order to log your "found it" online.
